What is the Provençal Art de la Table?
The Art de la Table is associated with the expression "dresser la table" which means “to decorate the table” as we receive guests.
In Provence, it implies colorful tablecloths to bring in the natural sunshine, artisan-made ceramics and olive wood serving tools, as well as delicious locally-grown foods.

Award-winning olive oil by Chateau d’Estoublon
In the heart of Provence, nestled on the southern slopes of the Alpilles lies the Château d'Estoublon, with its 18-hectare vineyard and 120 hectares of olive groves. Since 1489, this dreamy place has been passionately perpetuating the tradition of olive oils and exceptional wines.
The rare bottles of Château d'Estoublon have just been recognized as the best olive oils in the world by winning the most prestigious competition: the 2020 New York International Olive Oil Competition.
Board and serving utensils by Bois et Traditions
For hundreds of years, olive wood has been renowned for its natural beauty and density which makes it very strong.

Tea Towel by Olivades
Founded in 1818, Olivades is a famous, family-owned textile factory whose aim is to perpetuate the art of printing onto fabric in the South of France whilst adapting it to modern day life. Olivades is today the only company in Provence to carry on the tradition of printing onto fabric which began in Marseille as early as 1648.

Bring Provence to your table
L’aïoli, a traditional Provençal dish.
Pronounced ‘eye-O-lee’, the word is based on the old Occitan for garlic (alh) and oil (òli), which sums up what it is: a handmade mayonnaise with garlic and olive oil.
When I asked my family for the recipe, their answer was not very helpful. Like most of their cooking, they pretty much recommended me to wing it. “There isn’t just one recipe of the aïoli, everyone has their own. You have to adjust as you go and make it to your taste.” Hmm, sure. Cooking is an art, right? For my type-A friends (including myself), I’ve found a good recipe online and am happy to share it with you.
Also note that ‘aïoli’ can refer to an entire meal which includes the sauce and whatever you choose to eat with it. In Provence, a traditional aïoli garni comes with a selection of boiled vegetables (we do potatoes, carrots and cauliflowers in my family), cod/white fish, prawns, hard-boiled eggs and even escargots.
